They have many secrets that we hope you will discover when travelling to the different regions that produce them. 

Type of sweet wines :
 
- Natural sweet wines : wines elaborated like a regular wine that we will « muter » meaning that we will add a little alcohol to stop fermentation and keep the sugars not fermented yet. Those wines are in general quite high in alcohol and match perfectly with hard cheeses like Beaufort, Old Comté or blue cheeses like Roquefort, Stilton... or with deserts
 
- Liquorish wines : those wines are produced out of grapes having been harvested at the lastest letting acidity goes away and concentrated in sugar only.
In France the Liquorish designations will only be white. Those wines can be conserved for many years thanks to their high level of sugar. 
 
- Botrytised wines : coming from grapes affected with noble rot (botrytis), which will give roundiness, complexity and special aromas like mushrooms, truffle, woody aromas...
