A diverse Burgundy 

Who never dreamt of travelling across the mythic Climats of Burgundy: Chambertin, Romanée-Conti, Clos de Vougeot, Montrachet, Corton, Musigny... Classified at the UNESCO since 2015, Climats are more than 1000 to suceed each other between Dijon and Santenay, on the south of Beaune. Synonymous of lieu-dit, parcel, their names were not given by hasard and it is very interesting to pay attention to them.

Environment

Burgundy stretches along 150 kms from south of the parisian basin and north of the northern rhone valley.  It benefits from a great climate to vine growing : moderate rainfalls, good average hours of sunshine, northern wind drying off the vineyard in case of too much humidity.

Terroirs 
Whatever you appreciate more red or white wines, terroirs of Burgundy allows the best expressions of Chardonnay (white grape) and Pinot noir (red grape). Diversity of soils is very important and is revealed in the diversity of so reknown Climats and Clos. The best terroirs are said to be on the Côte de Nuits where the Comblanchien limestone formed 170 million years ago and the Côte de Beaune. You will find there the famous Premiers Crus followed by the Grands Crus and will be able to onotice that usually their vineyards are located on the mid-slopes of the AOC. 

Production
Wine is produced here for more than 2000 years! Later on monks of the region found a great place to improve quality of wine and to develop wine trade.
Mainly wine produced in the region is realised with Pinot Noir giving fine red wines on the north and more powerful ones on the south, white wines, more and more rosés and of course Crémants de Bourgogne (sparkling wines). Do not hesitate also to taste Crème de cassis (blackcurrant cream) produced here and blended with Crémant to create the famous Kir!

Gastronomy
Gougères (puffed salted and cheesy pastry), bœuf bourguignon (beef on a red stew), Burgundian snails, truffle, persilled ham, eggs en meurette (with a red sauce), mustard, l’époisses or citeaux (cheeses). And don't miss out the popular Mâchon! 

Briefly
There is not one Burgundy but many Burgundy: the one in Chablis almost wild, the famous one in Côte de Nuits and Côtes de Beaune, the more exclusive Côtes Chatillonnaise and Chalonnaise, the Mâconnais one with its charming little villages.
